Did you know that the State of Maine is one of 24 states that allows for the selling of raw milk from farmers directly to the consumer? The advantage of raw milk is that, unlike pasteurized milk, it is not cooked before being re-cooled for packaging. By not cooking the milk during pasteurization, raw milk has a creamier flavor and still contains important anti-pathogens normally destroyed by heating. It does, of course, have to be consumed within a shorter time frame, about a week, but it’s worth it.
